A thermostat consits of several parts Listed here hot water enters via the hot filter passes over the thermostat and exits at the end, as the water passes over the thermostat there is a pin that is forced out by the expanding wax in the thermostat this inturn moves the temperature plate against the spring closing the hot and opening the cold which then flows over the thermostat and out the end of the cartridge assembly this means the thermostat has full control of the temperature, if the cold pressure drops the thermostat will close the hot to stop it warming up, So how does the handle control the temperature?, when you turn the handle for hotter water a gear drive puts more pressure on the spring meaning the thermostat has to work harder to change the temperature.
So If you plumb the shower backwards the cold water flows over the thermostat and it tries to open what it thinks is the hot but in this case is the cold so you don't get any hot water, if the cold pressure drops slightly you will get some hot water through this is when you get Jumping either hot or cold and no mid way point.
If you never adjust your shower and your pressure is stable the thermostat hardly moves this is when its easy for limescale to settle on it causing the stat to seize or microscopic particles to get between the temperature plate and the housing jamming it in position.
